Nasturtium Feast

The wonderful winter rains in 2020 brought great relief to the water shortages in Cape Town. It is a wonderful reprieve for plant life all around. This year my favorite flowers exploded again.

It was a wonderful sight that allowed me to have my favorite fritters once more. I pick the flowers with its little stalks in place. This makes it easy to grab when you fry the fritters. Wash them in some salty water as they often have little ants hiding in the tubes. Place them on a clean cloth to dry before you fry them.

Just make your usual fritter batter and dip your flowers in the batter. use a fork or spoon to cover the petals. Don't worry if they fold close when you lift them out.

The petals are strong enough to hold together. They will also flatten out when you place them in the saucepan.

Fry them in a little bit of oil until golden brown. You can turn them over and flatten them to fry on the stalk side. Nasturtium fritters taste best with very little oil. Just cover the base of the saucepan with oil.
